Cardona's Traditional Antipasti Platter

Ingredients

-1/4 lb Sliced Proscuitto

-1/4 lb sliced Genoa Salami

-1/4 lb sliced Sopressata

-1/4 lb sliced Cappicola

-1/4 lb cubed Sharp Provolone Cheese

-1/4 lb cubed Fontinella Cheese

-1 cup green Sicilian olives (pitted)

-1 cup kalamata olives (pitted)

-1 cup Marinated Sundried tomatoes

-1 cup Marinated mushrooms

-1 cup Marinated Artichoke hearts

-1 cup Oven Roasted Peppers (recipe below)

 

Method

-Arrange all items on a platter and serve "before the meal" (Antipasti)

 

Oven Roasted Red Peppers

-4 Red Bell Peppers

-olive oil for brushing

-Sheet pan

-Paper Bag

-tbsp crushed garlic

-tbsp chopped fresh basil

-tbsp chopped fresh parsley

-extra virgin olive oil to drizzle atop peppers

-salt and pepper to taste

 

Method

-Preheat oven to 500 degrees

- Cut tops off peppers and clean out seeds and white "pith" from inside.

-Brush with olive oil and place on baking sheet

-Bake in the oven for 25-30 min or until outside of pepper is black.

-Place peppers in a paper bag and close bag. (the steam will loosen the skins of the peppers)

-After 10 minutes or so, remove peppers from bag and peel away skins from the pepper.

-Slice very thin and add your crushed garlic, Fresh basil and parsley, salt and pepper, and extra virgin olive oil.
