Cajun Cole Slaw

Yields 4-6 portions

 

Ingredients

8 cup Packed shredded cabbage

¼ cup plus 2 T Sugar

1/2 cup Cider vinegar

4T Chopped parsley

4T Chopped scallions

1T Olive oil

1T Salt

2-3 T Mayonnaise

2oz Pineapple Juice

1-2 teaspoons Cajun or Blackening Spice

 

Directions

Mix the cabbage, sugar, vinegar and salt together and allow to sit for one hour, tossing occasionally.

Squeeze the cabbage between your hands to remove as much liquid as possible. This step ensures that the finished cole slaw will remain a consistent, crisp texture.

Add the mayonnaise, pineapple juice and the Cajun spices. Allow to sit for 5 minutes before serving.
