Roasted Roma Tomatoes

Ingredients

4 Roma or plum tomatoes

2 tablespoons of olive oil

2 tablespoons Italian Seasoning (mix of dried Italian herbs)

1 teaspoon granulated garlic or garlic powder

1 tablespoon kosher salt

1 teaspoon black pepper

 

Directions

Preheat oven to 375-degrees.

Wash Roma tomatoes, trim stem end, slice tomatoes in half length-wise.

Place half tomatoes skin side down on a cookie sheet.

Brush tomatoes with olive oil using a pastry brush or a piece of paper towel.

Mix Italian seasoning, granulated garlic, kosher salt and black pepper together in a baggie and shake together.

Sprinkle mixture over sliced tomatoes.

Bake in oven for ½ hour.
