Avocado Corn Relish

Serves 8

A great simple summer or fall salad or side dish.  Add cilantro for more of a southwestern style salad and taste.

Ingredients:

-        ½ cup extra virgin olive oil

-        4 cups corn kernels

-        ¼ tsp salt

-        ½ tsp pepper

-        2 ripened avocados- peeled, pitted, ½ inch diced

-        1 large red bell pepper diced

-        1 large green pepper diced

-        Roasted peppers (hot chilies may be substituted)

-        4 scallions cleaned, trimmed and sliced

-        ¼ cup red wine vinegar

Method:

-        Heat oil (¼ cup), sauté corn with salt and pepper.

-        Add avocados, peppers, hot chilies, scallions, vinegar and the rest of the oil.

-        Let cool.

-        Serve with grilled chicken or fish as well as mixed vegetables or greens.

Note: Other variation may be served chopped with sliced tomato, fresh mozzarella, sprinkle with olive oil, lemon juice and chopped parsley.
