Carrot Cake

 
Carrot Cake

4 eggs
2 cups sugar
1 1/2 cups vegetable oil
3 cups of all purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
2 cups (14 ounces) grated carrots
1/2 cup raisins
1/2 cup chopped walnuts

Beat the eggs, sugar and oil in a bowl for 5 minutes. Add the flour, baking powder, soda, salt and cinnamon and beat until smooth. Add the carrots, raisins and walnuts and mix well. Pour into 2 greased cake pans that have been lined with parchment paper and bake at 350 degrees until a toothpick inserted comes out clean.

Cream Cheese Frosting
1 # room temperature cream cheese
1 1/2 sticks room temperature butter
2 tsp vanilla
6 cups confectioner's

Beat the ingredients in a large bowl just until smooth. Do not over whip.
