Chocolate Babka

(Best Batter Bread, "Bake for the Cure" Contest, Altamont Fair)

Batter:

Cooking Spray

2 envelopes Fleischmann’s Rapid Rise Yeast

2/3 cup very warm milk (130 degrees)

1/4 cup sugar

5 tablespoons butter, melted

1 egg + 1 yolk, beaten

1/2 teaspoon vanilla

1-1/2 cups bread flour

1/2 teaspoon salt

 

Topping:

4 oz. bar bittersweet chocolate

2 tablespoons sugar

2-1/2 tablespoons cold butter

1 tablespoon sugar

1/2 teaspoon cinnamon

 

Mix batter ingredients together in a pre-sprayed 8x8-inch baking dish. Combine chocolate and 2 tablespoons sugar in the small bowl of a food processor and pulse until finely chopped. Add butter and pulse until mixture resembles crumbs. Spread evenly over batter and press in. Combine sugar and cinnamon and sprinkle evenly over top. Bake by placing in a cold oven; set the temperature to 350 degrees. Bake for 40 minutes or until done (30 minutes or less for convection ovens).
