Apple Orchard Pork Chops
- 4 pork chops, cut 1-1/2 inches thick (lean)
- 2 teaspoons vegetable oil
- 1-1/3 cups apple cider or apple juice
- 1/4 cup Gulden's mustard
- 1/3 cup currants or raisins
- 2 apples, unpared, cored and sliced ½ inch thick
- 1/3 cup green onions
- 4 teaspoons cornstarch
- 1/4 cup water
- salt and pepper to taste
Heat oil in large skillet. Brown pork chops over medium-high heat about 3-5 minutes per side. Season with salt and pepper. Combine apple cider and mustard; pour over chops. Cover; cook over medium-low heat 12-15 minutes. Add apples, currants and green onions. Cover; cook 5 minutes longer. Place chops and apples on serving platter; keep warm. Gradually stir combined cornstarch and water into cider liquid. Cook and stir until thickened. Serve sauce over chops and apples. Serves 4.
