Hot Reuben 3-Ways
from Subs and Grubs

This is our basic recipe for a Hot Reuben Sandwich. We give you 3 meat alternatives, corned beef, pastrami and turkey.

Basic Ingredients

2 tablespoons butter
sliced rye bread
sliced Swiss cheese
1 cup sauerkraut, drained
1/2 cup Thousand Island dressing


Meat Alternatives:

1/2 lb deli sliced corned beef
possible spices - pepper corns, mustard seeds, bits of bay leaves, dried onion or garlic


1/2 lb deli sliced pastrami
possible spices - garlic, coriander, black pepper, paprika, cloves, allspice, or mustard seed


1/2 lb deli sliced turkey
possible spices - sage, pepper, thyme, tarragon or parsley


Directions

Preheat a large skillet or griddle on medium heat.

Place meat on grill.
Slice meat into tiny slices.
Add saurkraut and stir together to mix juices.

Lightly butter one side of bread slices.

Spread non-buttered sides with Thousand Island dressing.

On bread slices, layer 1 slice Swiss cheese, meat/sauerkraut mixture and second slice of Swiss cheese.

Top with remaining bread slices, buttered sides out.

Grill sandwiches until both sides are golden brown.

Serve hot.

Good with potato or macaroni salad.
