Stuffed Salmon Florentine with Seafood Sauce
From Hudson Harbor Steak & Seafood
9 oz Atlantic Salmon
Take a small pan and add butter & shallots, white
wine, parmeason cheese, salt & pepper & cook till
onions are soft and spinach is cooked. Add jumbo
lump crabmeat & set aside & keep warm.
In another sauce pan add seafood stock,sherry wine,
paprika, heavy cream, salt & pepper. Add this to
a small pot and bring to a boil. Set aside
Take the Salmon and cut a small pocket in the salmon
and add your spinach stuffing. Place in a small
baking pan & set the oven for 350 degrees. Cook for
15 to 20 mins. till flakly when touched with a fork.
Finish an top with seafood sauce.
Spinach Stuffing
2 oz jumbo lump crabmeat
l tsp chopped garlic
4 oz spinach
1 oz parmeasan cheese
1 tbs dry shallots
2 oz white wine
1 tbs melted butter
Seafood Sauce
4 oz seafood stock
1 oz sherry wine
1 oz paprika
2 oz heavy cream
salt & papper to taste
