Lobster Mac and Cheese

from Milestone Restaurant


§  2 Live Maine lobster 1 ¼ pounds each

§  Pint of 40% milk fat heavy cream

§  1 quart of whole milk

§  4 cloves of whole  peeled garlic

§  ½ of a peeled white onion

§  Pinch of cinnamon

§  Pinch of nutmeg

§  2 cloves

§  4oz of drawn butter

§  4oz of all-purpose flour

§  ½ cup of white wine

§  ¼ cup of gruyere cheese

§  ¼ cup of pecorino Romano cheese

§  ¼ cup of sharp yellow cheddar cheese


§  Place 2 gallons of water on the stove and bring to a heavy boil.

§  Place oven on broil setting

§   Place both lobsters in boiling water for 4 to 6 minutes.

§  Place lobsters in a ice bath to cool.

§  Remove lobsters from shells, and cut into desired pieces.

§  In a small sauce pot combine the milk, heavy cream, garlic, peeled white onion, nutmeg, cinnamon, cloves, and white wine, bring to a light simmer.

§  Melt butter in small sauce pot, and remove all fat solids, stir in flour until completely smooth, and then cook for 3 minutes. Slowly wisk the butter and flour into cream and milk mixture until sauce is smooth and thickened.

§  Strain sauce and place back on the stove on low heat, then add all of your cheese ingredients, and lobster meat.

§  Remove from stove, place mixture in desired ramekin or soufflé dish, then broil in oven for 4 to 6 minutes till golden brown.
