Penne Ala Vodka with Sausage from Russo's Bar and Grill

Penne Ala Vodka with Sausage

(serves 4-6)

1  Qt. Heavy Cream
14 oz. Marinara sauce or canned tomato sauce
1 lb. Italian sausage (loose)
1 lb. Penne or Rigatoni pasta
2 T. Olive oil
2 T. fresh chopped garlic
2 oz. Vodka
4 oz. Feta cheese
6 oz. Grated parmesan cheese
1 T. Black pepper
1 T. Granulated garlic
1 T. Red pepper flakes
1 T.  Chopped parsley


Cook pasta
Using a 5-6 quart pot on medium heat
add olive oil
add sausage (rolled into one inch balls)  to hot oil and cover
when sausage starts to firm, lightly scrape from pot and turn over when sausage is almost cooked
add fresh garlic, red pepper flakes, parsley and vodka (use care when adding the vodka as it may cause a flame)
cover for about 30 seconds
add heavy cream, marinara, granulated garlic & black pepper
when sauce begins to boil reduce heat to low and add grated parmesan and feta cheeses
continue to stir for 2 minutes
add cooked pasta and mix with sauce
cover pot for 1 minute
Ready to serve and enjoy!
