Easy Cranberry Trifle

An easy, elegant dessert using Thanksgiving leftovers? Yup! It can be
done. And here's how:

about 1/2 cup cranberry sauce, plus additional for bottom of the bowl

8 ounces cream cheese, at room temperature (regular, low fat or no-fat)

confectionery sugar, optional

soft-baked gluten-free or regular chocolate chip cookies, crumbled (If
gluten-free, Enjoy Life brand suggested.)

about 1 cup whipped cream

mini-chocolate chips, optional


1. In medium bowl, mix together 1/2 cup cranberry sauce and cream
cheese. Beat on medium speed until light and fluffy, about 30 seconds.
Taste. If cranberry cream isn't sweet enough, add confectionery sugar
to taste. (All cranberry sauces vary in sweetness. Your cranberry
cream might be sweet enough or it might need a little additional
sweetness from the confectionery sugar.)

2. Place about one teaspoon of cranberry sauce on the bottom of six
dessert cups. Spoon in two to three tablespoons of cranberry cream.
Layer with a sprinkle of crumbled chocolate chip cookies. Add another
layer of cranberry cream and chocolate chip cookies. Top with whipped
cream and, if desired, a sprinkle of mini-chocolate chips.

3. Serve at once or chill.

Makes six servings.
