New Orleans Pasta Creole
from Bayou Cafe
1 suntan pepper, a few celery stalks, and a Spanish onion all chopped and sauteed in olive oil.
When done add a can of tomato sauce and a can of diced tomatoes in juice and simmer on low heat with oregano, white pepper, cayenne pepper, garlic, black pepper, thyme, and basil (a pinch of each).
Then add shrimp, sliced chicken breast, and sliced smoked andoulli sausage and toss in penne pasta
