Pan Seared Faroe Island Salmon from Cornell's Restaurant

Pan Seared Faroe Island Salmon

from Cornell's Restaurant
 

2   6oz piece of Faroe Island Salmon
2   Vine Ripened Tomato
1   Cup of Imported Extra Virgin Olive Oil
1   Sprig of Fresh Thyme
1   Lemon
1/2 cup of White Vinegar
1oz Arugula
1oz Radicchio
Salt and Pepper to taste
 
In a non stick pan add 4 tblspns of Olive Oil over high heat, Sprinkle salt and Pepper on both sides of Salmon and place in pan. Sear on both sides for 2 - 3 minutes. Cooking time will vary depending on the weight and depth of Salmon Filet.
 
When done set to side .
 
In a mixing bowl add the remaining Olive Oil, Vinegar, Lemon Juice and Fresh Thyme to complete the Vinaigrette and mix well.
 
Combine the chopped Tomatoes, Arugula and Radicchio and toss. Serve over the Seared Salmon
