Pizzelles

From Beth's Farm Kitchen

Basic Pizzelle Yield: 2 dozen

3 large eggs
3/4 cup white sugar
2 teaspoon anise extract
1 stick (1/2 cup) Butter, melted
1 3/4 cup All-Purpose Flour
2 teaspoon baking soda
powdered sugar to dust cooled cookies

Plug in pizzelle maker to preheat .
Beat eggs and sugar until light yellow (2-3 minutes). Add melted butter and anise extract. Beat until blended. Sift together dry ingredients and fold until just blended.
Spoon 1 Tablespoon of batter onto the center of each griddle. Bake until golden brown (about 2 minutes). Remove and cool on rack. Dust cooled cookies with powdered sugar.
