Ramp Pesto
from Beth's Farm Kitchen

Yield: 3 cups

12 oz. of ramps (about one bunch)
1 1/2 cups olive oil
1 teaspoon salt
1/2 cup grated cheese
1/4 cup pine nuts
2 Tablespoons lemon juice

Combine all in a food processor and puree until almost smooth. Serve on hot pasta; use as a sauce base when making a pizza or on cheese and crackers.
