Pollo al Chipotle

2 Boneless chicken breast (cut into small square pieces)
½ teaspoon of salt
2-3 Teaspoons of extra virgin olive oil
3 Teaspoons of chopped Spanish onions
3 Teaspoons of fresh chopped garlic
1/3 cup of cilantro
3-4 Chipotle peppers in adobo sauce (comes in a can)
1 cup of fresh chopped tomatoes
3 Teaspoons of sour cream
¼ cup of heavy cream

In a pan lightly sautée garlic and  onions. Add chicken and  salt.  When chicken is tender add cilantro, tomatoes and chipotle peppers. Stir for a few minutes then slowly add sour cream and  heavy cream . Simmered for an additional  5 minutes.  May be Served with rice and Tortillas.
