 Fried Stuffed Zucchini Flower from Augie's Family Style Italian Restaurant and Bar

 
10 fresh zucchini flowers
 
Stuffing:
1 cup ricotta cheese
1 oz fresh basil
1 oz sun dried tomato
2 oz smoked mozzarella
1 oz parmigiana cheese
Place all ingredients in bowl and mix together. With a teaspoon, spoon some of the stuffing into the open flower and pinch the end of the flower.
 
Batter:
1 cup of a dark ale beer
1/3 cup of flour
1 oz chopped basil
1 oz parmigiana cheese
Place all ingredients in a bowl and mix till smooth.
 
With a deep frying pan heat oil to 350 f.
Roll the stuffed flower in flower and then dip into the batter. Slowly place flowers into the hot oil and cook till golden brown.
