Shrimp Po'Boy from Jared Bafaro of Bayou Cafe in Glenville


Ingredients:


1 hard roll or hamburger bun
5 16/20 P&D shrimp
handful shredded lettuce
handful favorite coleslaw
1 clove garlic minced
2 oz melted butter
pinch of salt
pinch of pepper
dusting of Cajun seasoning
dash of parsley for color


Directions

Heat up the butter in a saute pan until very hot, and while this happens you can toast the bun if you like it that way
next take off the tail of the shrimp before putting them in the pan, then as soon as the shrimp hit the pan add in the garlic, salt, pepper and Cajun seasoning. flip the shrimp as soon as you see the pink color come out and add the parsley and saute the shrimp a bit more. The shrimp cook really fast in very hot pans so it wont take long to over cook them.
when the shrimp is done put all 5 shrimp on the bottom part of the toasted bun and on the top part put the lettuce and cole slaw. put the two together and enjoy
