Aunt Pia's Ciambotta (Garden Stew) From Liz Beals of Beth's Farm Kitchen
-2 cloves Garlic
-1 large onion
-3 ribs celery
-1/2 # sausage
-1 medium zucchini
-3 plum tomatoes
-Beth's farm Kitchen Blazing Tomato Chutney (can be found at Honest Weight)
-salt and pepper to taste
Other options: green beans, potatoes, eggplant or anything in the garden.
Dice all vegetables and remove sausage out of natural casing. In a large pan, heat olive oil and brown sausage. Add all other vegetables and chutney. If you would like the stew to be more liquid, add enough water or chicken stock to your liking. Bring stew to a simmer and cook for 30-45 minutes until all vegetables are tender. Adjust seasonings with salt and pepper.
Serve with crusty bread.
