New York State apple season

This is the peak of apple season in New York State. Linda Quinn from the New York Apple Association talks about some of the different apples you can find in New York State.

Roasted New York Apples and Freekeh Salad

1 ½ cups Freekeh

1 medium onion, chopped

¾ cup dates with pits, remove pits and chop

3 cups vegetable broth or culinary stock

3 cups New York Apples (4), diced

2 tablespoons  Olive Oil

½  cup walnuts, chopped

Salt and Pepper

Instructions

1.      Combine freekeh and broth in pot.  Bring to a boil and cook 1 minute.

2.      Reduce Heat to low, add diced onion, salt and pepper to taste.  Cover pot and simmer 25-30 minutes or until desired tenderness is reached

3.      While the Freekeh cooks, prepare apples.  Toss apples in bowl with olive oil.  Spread on foil lined cookie sheet.  Bake at 400 for 15 minutes or until tender.

4.      Stir cooked apples , dates and walnuts into Freekeh

5.      Serve warm.
