Taco Tower from Jodie Fitz of the Price Chopper Kids Cooking Club

Layer 1 = Refried Beans (16 oz. can)

Layer 2 = Guacamole (see below)

Layer 3 = Seasoned low or non fat sour cream (see below) Layer 4 = Chopped sweet onions or scallions Layer 5 = Chopped black, pitted olives (14. 5 oz. can) Layer 6 = Chopped tomatoes Layer 7 = Shredded reduced fat sharp cheddar cheese (8 oz.)

Guacamole Recipe: for Layer #2 by Jodie Fitz

2 ripe avocado’s

1/2 clove garlic (from a large clove)

1 tablespoon finely chopped onion

1 tablespoon lime juice

1 2 tablespoons finely chopped tomatoes

1/2 teaspoon cracked pepper

1/2 teaspoon salt

-Using a knife cut into the avocado lengthwise and cut around it through to the pit in the center. There are some FANTASTIC avocado cutters that are great for kids to use that don’t have the sharp edges so that they can complete the entire process from beginning to end.Once you’ve cut around the entire avocado, twist it and separate the two sides. Remove the pit. Scoop out the ripe avocado and mash it up. Add in the the salt, pepper, lime juice, onions and tomatoes and stir it all together. We are light on the onions and tomatoes in this mix due to the other layers.

Seasoned Sour Cream: Layer #3

-16 oz. low fat or no fat sour cream

-1 package of taco seasoning

Simply fold the seasoning into the sour cream until it is thoroughly mixed.Folding is a GREAT lesson to share with kids. I like to tell kids I’m cooking with that when you read it in a recipe it’s like a STOP sign that says don’t use an electric mixer on my, stir me slowly and gently.
