Shakshuka with Nico Werboff

Ingredients: (3 servings)

1 big onion

1 big red pepper

2 garlic cloves

6 tomatoes

1/4 cup of chopped fresh Parsley

5 large eggs

1 cup of water

1 teaspoon of dried Oregano

1 teaspoon of dried Parsley

1 teaspoon of Paprika

3 tablespoons of brown sugar


Heat the oil in a large skillet. 
Add the onions, peppers and garlic and sauté over medium heat until golden brown, 8 to 10 minutes.
Add the spices and stir for another 3 to 5 minutes.
Stir in the tomatoes and sauté for another 2 minutes.
Slowly pour in the water. Stir in the sugar, salt and pepper, and let the mixture simmer for 25 to 35 minutes.
Gently, crack the eggs into the tomato mixture. Cover and simmer for approximately 10 minutes or until the whites of the eggs are no longer translucent.
Just before serving, sprinkle the fresh chopped Parsley on top of the Shakshuka and VOILA!
