DIY Chocolate Chip Chewy Granola Bars with Almonds

It's fun and easy to make your own chewy granola bars. The best part?
You can change the ingredients to suit your taste!


Nonstick cooking spray
2 cups regular or gluten-free quick-rolled oats (not old-fashioned oats)
2 cups regular or gluten-free crispy rice cereal
1/4 cup chopped almonds (see note below)
1/4 cup chocolate chips (see note below)
1/2 teaspoon kosher salt
6 tablespoons unsalted butter or coconut oil
1/3 cup dark brown sugar
3 cups (5 ounces) marshmallows



1. Spray 9- by 13-inch baking dish with cooking spray. Set aside. In
large bowl, toss together oats, crispy rice cereal, almonds, chocolate
chips, and salt.

2. In large saucepan, melt butter over medium-low heat. Add brown
sugar and cook, stirring constantly, until sugar melts. Add
marshmallows and continue to cook, stirring, until marshmallows melt.
Turn off heat and stir in oat mixture until just combined.

3. Press mixture evenly into prepared baking dish and refrigerate for
2 hours. Remove from refrigerator. Using thin metal spatula, lift
granola out in a single layer.

4. Cut into 24 bars. Store in an airtight container for up to two weeks.

NOTE:
These bars welcome change. Replace the almonds and/or chocolate chips
with the following to make bars that suit your taste!

1/2 cup dried fruit, such as raisins, dried cranberries, dried
cherries, or dried blueberries
1/2 cup mini marshmallows (Added along with the dry ingredients, so
they don't melt)
1/4 sweetened flake coconut
1/4 cup white or milk chocolate chips
1/4 cup chopped peanuts (honey roasted or salted)


For a more nutritional boost, add:
2 tablespoons ground flaxseed
OR
1 tablespoon chia seeds
