Grilled Salmon with Art Wise

It's the start of meteorological summer and ShopRite Chef Art Wise has some great ideas for your summer eating. He makes grilled salmon in our 'Let's Eat Kitchen.'

Grilled Salmon

Servings:  4

Preparation Time:   10 min.                                                           Cook Time: 15 min.

Yield: 1 each

Ingredients:

1/3 cup ShopRite Dijon Mustard

1/3 cup ShopRite Red Wine Vinaigrette salad dressing

1/3 cup ShopRite Orange Juice

2 tsp. sugar

4 (4 oz.) salmon fillets

1 (5 to 7 oz.) box mixed salad greens

1 cup julienne red onion

1 bunch asparagus spears, grilled until tender

1 tbs. Brooks Veg Sea Salt

2 tbs. olive oil

Orange Segments (fresh or canned)

Sliced Almonds

Procedure:

COMBINE mustard, red wine vinaigrette, orange juice and sugar in bowl; set aside.

GRILL salmon on a well-greased grill over medium heat for 12 to 15 min. until opaque in center, turning and basting once with 1/3 cup of the dressing. Season asparagus with Brooks seasoning and toss

ARRANGE greens on 4 serving plates. Top each with 1/4 cup onions, 1 salmon fillet, and a few asparagus spears. Drizzle remaining dressing over salads. If desired, garnish with orange segments and sliced almonds.

 

 

Asian Pear Slaw

Preparation Time:  20 min.                                  Cook Time: 15 min.

Ingredients:

2 celery ribs

3 tablespoons fresh lime juice

2 tablespoons seasoned rice vinegar

1 teaspoon finely grated peeled fresh ginger

2 firm Asian pears, cut into 1/4-inch-thick matchsticks

2 scallions, thinly sliced diagonally

1/4 cup fresh cilantro leaves

1/2 teaspoon finely chopped fresh hot red chile, or to taste

 

Procedure:

Peel strings from celery with a sharp vegetable peeler and cut celery into 1/4-inch-thick matchsticks.

Whisk together juice, vinegar, and ginger and stir in celery and remaining ingredients with salt and pepper to taste. Let stand at room temperature 15 minutes before serving.
