No Bake Cheesecake

Ingredients:

2 cups Argyle Cheese Farmer Plain Greek Yogurt

¼ cup pure maple syrup

2 teaspoons premium vanilla extract

Zest of a small organic lemon

¼ teaspoon Himalayan salt

Enjoy Life Gluten Free Snicker-doodle cookies

Fresh berries

5, 4 ounce mason jars

In a large bowl whisk together the Argyle Cheese Farmer Plain Greek Yogurt, pure maple syrup, vanilla extract, lemon zest and Himalayan salt until all of the ingredients are thoroughly incorporated.

Place a gluten free snicker-doodle cookie in the bottom of a 4 ounce mason jar. Fill the jar the rest of the way with the cheesecake mixture. Repeat process until all 5 mason jars are full. Cover and refrigerate for up to 3 days. Just before serving top with fresh berries.

*Quick Tip: Making the cheesecake in individual serving size mason jars, make these little cheesecakes the perfect treat on the go!!

Asian Lamb Lollipops

Ingredients:

2 pounds ground lamb (you can also use grass fed beef)

1 tablespoon ground organic ginger

1 teaspoon ground cumin

¼ teaspoon ground nutmeg

½ teaspoon Himalayan salt

2 cloves of fresh garlic, finely chopped

2 tablespoons pure maple syrup

2 tablespoons San-J Gluten Free Soy Sauce

¼ cup San-J Gluten Free Teriyaki Sauce

12 farmers market fresh Scallions

Preheat oven to 375 degrees. Line a baking pan with tinfoil.

Cut the roots and dark green parts of the scallions off, leaving behind approximately 4 inches of white and light green stalk. This is going to be your lollipop stick.

Finely slice the dark green parts of the scallions. Add all ingredients, including the sliced green scallions, to a large bowl and mix until thoroughly combined.

Evenly divide the meat mixture and shape into twelve balls. Stick one of the scallion lollipop sticks into the ball and place the lamb lollipop onto the tinfoil lined cookie sheet. Repeat process until all twelve lollipops are created.

Bake for 30-35 minutes. Brush the lamb lollipops with the San-J Gluten Free Teriyaki Sauce for a beautiful glaze. Serve on a lovey platter lined with fresh greens from the farmers market.
