Easy Lemonade Pie
For the Crust:
1 1/2 cups finely ground vanilla sandwich cookie crumbs, about 22 cookies or 1 (10.5 oz) package
4 TB butter melted
To grind cookies, either place them in a food processor an process until fine or seal the cookies in large plastic bag and break up the cookies with a rolling pin.
For the filling:
1 (3 oz) box lemon gelatin
1/2 C boiling water
1/4 C freshly squeezed lemon juice
1 C ice
3 C whipped cream or non-dairy whipped topping
Instructions: for the crust, preheat oven to 350 degrees. In a small bowl, combine cookie crumbs and melted butter. Stir with a fork to combine. Mixture should be damp and hold together when pressed. Press crumb mixture onto bottom and sides of a 9 inch pan. Bake until aromatic 12 minutes. Remove pan from oven and place on wire rack to cool.
For the filling: in medium bowl, combine gelatin and boiling water. Stir with fork until gelatin dissolves. Add lemon juice and stir. Add ice. Stir until ice almost melts. Chill mixture in the refrigerator for 5 minutes. Gelatin should thicken, but not set.
Place the whipped cream in a large. Add the thickened gelatin mixture. Whisk to combine.
Spoon into prepared crust. Chill until set, about three hours. Serve chilled.
