Augie's Fried Stuffed Zucchini Flowers

Fried zucchini flowers stuffed with shrimp, crab, basil,and ricotta.

4 large zucchini flowers

1 cup ricotta cheese

2oz shrimp

2oz crab meat

1 table spoon

1 table spoon italian parsly

1 tea spoon fresh garlic

1 oz grated parmigiano cheese

salt/ pepper to taste

2oz olive oil

Cut shrimp into small pieces and saute with olive oil and garlic. Let cool and combine with all other ingredients to form the stuffing.  With a tea spoon, spoon the stuffing into the open end of the zucchini flowers. Next prepare the batter for frying.

1 cup of flour

1 egg

1 table spoon of chopped basil

4 oz beer

salt and pepper

Combine all ingredients to form a smooth batter.

Pre- heat 4 cups of frying oil to 325f.

when oil is hot dip the stuffed flowers into the batter and then into the hot oil.

Fry to a golden brown, and with a slotted spoon remove from oil and enjoy.
