Apple Cider Panna Cotta

In a heavy bottom pot, bring to just before boil…..

   10 oz  Heavy Cream

   10 oz  Whole Milk

  0.1 oz  Salt ( ½ tsp)

     4 oz Granulated Sugar

  0.2 oz Vanilla Extract

0.05 oz Cinnamon  (1/2 tsp)

0.03 oz Ground Cloves (1/4 tsp)

Turn off heat and whisk in…..

   8 oz Boiled Apple Cider (see method)

Stir in….

0.25 oz Unflavored Gelatin (that has been dissolved in 1 oz of water)

Bring back to low heat until the gelatin is dissolved, do not boil.

Portion into eight 4oz ramekins. Refrigerate 3-4 hours until set

Boiled Apple Cider

Bring to boil, then reduce to simmer…

32 oz Apple Cider

Continue cooking until apple cider is reduced to about 8 oz
