 Chocolate Black Pepper Spice Cookies

           (about 3 dozen cookies)


 Use a kitchen scale to weigh your ingredients for best results


Cream Together


Unsalted Butter         4 oz

Granulated Sugar      9 oz

Salt                         0.1 oz (1 tsp)

Vanilla                     0.2 oz (2 tsp)


Mix in slowly

Whole Eggs              4 oz (2 extra Large)


Stir together and add until just combined

All Purpose Flour        8 oz

Cocoa Powder            2 oz

Baking Powder       0.17 oz (1 tsp) 

Black Pepper            0.1 oz  (2 tsp)

Cinnamon                 0.1 oz  (1 tsp)

Nutmeg                   0.05 oz  (1/2 tsp)     

Clove                       0.05 oz  (1/2 tsp)   


Stir in

Chocolate Chips     5 oz

Using a small ice cream scoop or spoon, scoop out  1 oz portions of cookie dough onto a parchment paper lined  baking sheet. Bake in a preheated 325f oven for 10 to 12 minutes. When cooled, dip icing glaze.


Chocolate Icing Glaze

Whisk together until combined

16 oz Powdered Sugar

   1 oz Cocoa Powder

   2 oz  Dark Rum

   2 oz  Water

Pinch of Salt
