Honey Bran Waffles
Whisk together in a large bowl: ¾ cup all purpose flour ¾ cup whole wheat flour ½ cup course wheat bran 2 teaspoons baking powder ½ teaspoon salt ¼ teaspoon baking soda
Whisk together in another bowl: 1 ½ cups buttermilk 1/3 cup honey ½ cup butter melted 2 eggs ½ teaspoon vanilla extract
Make a well in the center of the dry ingredients and pour in the wet ingredients. Combine with a few swift strokes of a whisk. Pour 1 cup of batter into a waffle iron and cook until done.
For the strawberries: 1 quart of Bowman Orchards strawberries, de-hulled and quartered 1 bunch of lime basil from Barber's Farm, de-stemmed and chopped 1 tablespoon canola oil + 1 tablespoon olive oil 2 tablespoons white balsamic vinegar 2-4 tablespoons of honey, or to taste Pinch salt 1 six ounce container of Argyle Cheese Farmer maple flavored whole milk Greek yogurt
Combine all the ingredients except for the yogurt in a large bowl. At this point you may be happy with the flavor of the berries but they can re-seasoned to suit your individual preference. Adding more vinegar will give the berries a tart edge. The addition of honey will add sweetness and the oil will impart a richer mouth feel.
To assemble: Cut each waffle and place on a plate. Spoon the berries on top and garnish with the maple yogurt
