Father's Day Man Omelet with a kick

Ingredients

-4 large eggs

-thick, chopped pieces of pancetta or Italian bacon (as much as desired)

-shredded fontina and horseradish cheese (as much as desired)

-1/4 of a medium sized green pepper, red pepper, jalapeno pepper and red onion (chopped in large pieces for a big manly man)

-fresh ground pepper

 

Directions

In a small or medium pan, cook pancetta on low heat (you can substitute or add regular bacon, ham or sausage).

While that's crisping, whisk the eggs and sprinkle in cheeses and vegetable mixture in a separate bowl. Add pepper (you don't need salt...there's enough salt in the pancetta).

Slowly pour egg and vegetable mixture into the pan cooking the pancetta. There's enough fat in the pancetta to grease the pan so don't need additional oil or butter.

Serve with oranges and strawberries for a colorful, beautiful breakfast for dad!
