Banana Macadamia Nut Bread Pudding

Ingredients:

  • 2 bananas (smashed)
  • 1 loaf challah or brioche bread (cubed)
  • 2 cups heavy cream
  • 2 cups ½ and ½
  • 2 teaspoons vanilla extract
  • 1½ cup toasted macadamia nuts
  • 1 cup granulated sugar
  • 6 eggs
  • pinch of a cinnamon and salt
  • 1½ cups white chocolate

Method:

Start by cutting bread into medium sized cubes. In a mixing bowl, add sugar, eggs, cream, ½ and ½, cinnamon, salt, and vanilla. Beat with a whisk until smooth. Peel bananas and smash them into the cream mixture. Pour over bread and add white chocolate and nuts. Fold through. Coat the bottom and walls of a pan with butter (or nonstick spray if you prefer) then place mixture into pan making sure bread is completely covered with liquid. Cover with parchment paper and aluminum foil and put into a 350° pre-heated oven for approximately an hour and a half. Let rest for 15 minuets, then scoop and serve.
