Parmesan Crusted Seabass

from Mio Vino Wine Bar & Bistro

8 oz filet of Chilean Seabass (skin removed)
Salt, Pepper, Fresh thyme
 
For crust:
half cup grated parm cheese
quarter cup softened butter
3 tbls mayonnaise
2 tbls lemon juice
3 tbls chopped green onions
quarter tsp salt
dash of hotpepper sauce
 
mix ingredients well in a bowl
 
For potatoes:
cut fingerling potatoes
melted butter
 
simmer cut potatoes in melted butter until cooked but with a slight bite.  Use tongs to test hot potatoes.  Strain the potatoes, let them cool on a sheet tray with salt and pepper.  heat in oven 5-10 minutes to crisp
 
For fish
Start with a hot saute pan, take the seabass filet and dust it with salt, pepper, and fresh thyme.  Put a tbls of Extra virgion olive oil in the pan and sear both sides of the fish to get a golden brown color on the sides.  Place the fish on a baking sheet and spread 1-2 tbls of crust mixture over the top of the fish and bake in a 500 degree oven or broiler until the crust gets a nice golden bwon melted cheese look and serve with the hot butter poached fingerling potatoes and your favorite vegetable.
