BALLSTON SPA -- The tables are set. The food is being prepped. And last minute changes are almost complete after a seven week forced hiatus, Augie's Restaurant is ready for business again.
"We're just grateful and excited to get back to doing what we do best...psyched and ready to go," explains Augie Vitiello, the chef/owner.
A fire burned Saratoga County's first Augies to the ground in early August. Two weeks later, a former banquet house on Low Street in downtown Ballston Spa was procured.
"It's exciting to know I still can do it."
For the last five weeks, Augie's 15-20 staff members have been working tirelessly to re-open the restaurant. Tiling, painting, cleaning and decorating day and night because being out of work, especially during track season, was devastating.
"You couldn't ask for a worse time...to lose the month of August...by far our busiest time of year."
It's a Saratoga staple that diners clearly missed too. Augie's phone has been ringing non-stop with calls from people anxious to hear where, and then when, the could eat family style in Saratoga again.
"In my mind, the biggest thing was to get open, right away. The longer we wait, it's not gonna be good."
Augie's doors open Wednesday at 4p
