Grilled Mac and Cheese Sandwich from Viola's
2 Slices of Peasant Bread
4 Slices of good quality American Cheese
3 Slices of Bacon
Freshly Sliced Garden Tomato
Macaroni and Cheese prepared the day before and chilled
Take the peasant bread and lay down 2 slices of American Cheese
Add a layer of the Macaroni and Cheese, previously prepared
Layer with cooked bacon and sliced fresh tomato
Add 2 more slices of American Cheese
Top with peasant bread
Butter one side of the sandwich and place in frying pan.
Grill until golden.
Flip the sandwich and grill the other side making sure that the cheeses are melted.

Sweet Potato, Apple and Leek Soup
2 tbsp. butter
2 leeks, thinly sliced
1 large carrot, thinly sliced
2 sweet potatoes peeled and cubed
2 large tart apples, such as Granny Smiths, peeled and cubed
5 cups water
freshly grated nutmeg
1 cup apple juice or apple cider
1 cup half and half
salt and pepper
Melt the butter in a large saucepan over medium-low heat. Add the leeks. cover and cook for 6-8 minutes, or until softened, stirring frequently.
Add the carrot, sweet potatoes, apples and water. Season lightly with salt ,pepper and nutmeg. Bring to a boil, reduce the heat and simmer, covered, for about 20 minutes, stirring occasionally, until the vegetables are very tender.
Allow the soup to cool slightly, then transfer to a blender or food processor and puree until smooth, working in batches if necessary.
Return the pureed soup to the saucepan and stir in the apple juice. Place over low heat and simmer for about 10 minutes until heated through.
Stir in the half and half and continue simmering for about 5 minutes, stirring frequently, until heated through. Taste and adjust the seasoning adding more salt, pepper and nutmeg, if necessary.
