Apple Cake from Carole Murko
Is there anything more evocative of fall and comfort than the smell of baked goods? My Mom grew up in a neighborhood with a lot of Germans. She always said they were the BEST bakers! Here’s a recipe from Mom’s archives. She doesn’t quite remember whose recipe it was originally but like most recipes that are shared and handed down, they become ours. Her one change was using walnut oil as an addition to the canola to give it a slightly richer and nuttier flavor.
1 cup Walnut Oil
½ cup Canola oil
2 cups Sugar
3 cups Flour
1 tsp Salt
1 tsp Cinnamon
1tsp Baking Soda
1 tsp Vanilla
3 cups peeled, cored and sliced apples
1 cup Chopped Walnuts
1 cup Raisins
Preheat oven to 350.
Beat together oil and sugar. Add eggs and beat until the mixture is creamy.
Sift together flour, salt, cinnamon, and baking soda. Add to sugar mixture and stir to blend. Add remaining ingredients and stir to blend.
Turn mixture into a buttered Angel food cake pan. Bake 1 hour and 15 minutes or until done. Serve at room temperature.
