Black Bean Vegetarian Chili from Viola's Cafe

Recipe for the chili:

1 large onion diced

2 assorted peppers diced

6 cloves of garlic minced

3 cans black beans

1 12 oz can tomato sauce

1 1/2 tsp. oregano

1/2 tsp cumin

2 tsp chili powder

1/4 cayenne pepper

Water to thin

Saute the onion, peppers, and garlic until soft.

Add all the spices.

Cook for 2 minutes.

Add the drained black beans, reserving 1/2 cup of the liquid.

Add the tomato sauce and water.

Cook for 15 to 20 minutes.

To roast the pumpkin:

Hollow out a medium size pumpkin

Coat the pumpkin with olive oil inside and out

Season the inside of the pumpkin with salt, pepper and a little cinnamon

Roast the pumpkin at 350 for about 1 to 1 1/2 hours, depending on the size

Fill the pumpkin with the Black Bean Chili

To serve:

Scoop out the chili with a little bit of the roasted pumpkin

Garnish with shredded cheese, sour cream and avacado

Serve with Viola's Flat Bread.
