Linguini Putanesca from Augie's Restaurant
1 lbs of linguini pasta
3 cup of crushed tomato
1 oz of anchovies
1 oz of capers
2 oz olives
1 oz garlic
1 tbs fresh basil
2 oz olive oil
2 oz parmesan cheese
In a pot of salted boiling water cook your linguini.
In a sauce pot heat your olive oil, add garlic, and anchovies. Saute until garlic is a light brown color.
Add olives and capers, and saute. Add the crushed tomato and slow simmer for 10 minutes.
Add the cooked linguini to sauce, and the fresh basil. Toss pasta into the sauce then add the parmesan cheese. Serve and enjoy.
