Artisanal Grilled Cheese

Tomato, Pesto, Fresh Mozzarella Grilled Cheese

2 pieces artisan bread

2-3 pieces garden fresh tomato 

3 slices fresh mozzarella

2tbsp fresh pesto

Roasted garlic 

Softened butter

  1. Pre-heat flat top grill
  2. Butter each side of bread
  3. Spread pesto on each slice of bread 
  4. Layer 3 pieces tomato
  5. Layer 3 slices fresh mozzarella
  6. Place on grill set to medium heat and grill for a couple minutes until golden brown. 
  7. Turn sandwich and leave on grill until cheese is melted. 
  8. Remove from grill and slice in half. 

Fresh Pesto

  1. 2 cups packed fresh basil leaves.
  2. 2 cloves garlic.
  3. 1/4 cup walnuts
  4. 2/3 cup extra-virgin olive oil, divided
  5. 1/2 cup freshly grated Pecorino cheese.
  1. In a food processor pulse basil until fine
  2. Add walnuts and pulse
  3. Add fresh garlic and pulse
  4. As garlic is processing slowing add olive oil until a paste forms. 
  5. When done add cheese and salt and pepper.
