Blackened Chicken Alfredo with Broccoli

Rob Lagonia of Lagonia's Restaurants prepares a great Blackened Chicken Alfredo with Broccoli for Dan in the Let's Eat Kitchen.

6 oz chicken breast coated with blackening spice placed into Black Iron Frying with little bit of oil in pan. Place chicken face down into pan until first side gets to desired color, turn chicken over and cook to desired color. If chicken is not cooked through put into oven on 350 degrees until cooked through.

In frying pan melt butter once butter is melted add fresh garlic let garlic cook until lightly browned. Add in all of the heavy cream and bring to light boil. Once cream is lightly bubbling add in grated cheese and whisk in until cream thickens. Cook Fettuccine until al dente toss in broccoli just before pasta is cooked through to lightly blanch the broccoli. Once pasta is cooked toss into alfredo along with broccoli stir well until fully coated. Slice blackened chicken into strips and place on top of Fettuccine and serve. Top with fresh chopped parsley just before serving and a little more grated cheese.
