Valentine’s Day Heart-Shaped Pizza

Perreca’s Frozen Pizza Dough - thawed and kneaded into a round ball, then left in bowl covered with dish towel to reach room temperature


Canned whole plum tomatoes — crushed with hands


Fresh Basil

Shredded Mozzarella Cheese

Additional Toppings as Desired


Allow plenty of time to stretch out a 1 lb. dough ball into a round pizza crust.  Remember to keep work surface well floured.  Stretch out dough.  Allow to rest.  Then go back and continue to stretch out a 2nd time.  That’s the best way to handle Perreca’s Pizza Dough.  It doesn’t have any fat, so it takes a little more effort to stretch … but of course it’s worth it, because Perreca’s means love!


To form the heart-shaped pizza crust, flour the top of your round crush and fold it over on itself.  Next trace out 1/2 of a heart with a sharp knife or pizza cutter.  Unfold crust and admire your heart-shaped pizza crust.


In a bowl combine canned whole plum tomatoes - crushed with hands, kosher salt to taste, and fresh, torn basil leaves to form a simple and authentic Napolitano Italian Pizza Sauce.  Cover pizza with desired amount of sauce, mozzarella cheese, and any additional toppings as desired.  Bake in a pre-heated 450 degree oven until edges are golden brown.




Valentine’s Day Chocolate Mousse





For the Chocolate Mousse:


4 Extra Large Eggs (yokes only)

1/3 Cup Sugar

1 tsp Pure Vanilla Extract (the best quality you can find is from Madagascar)

8 oz 60-66% Bittersweet Chocolate or Chocolate Chips

1/2 Cup WARM Heavy Cream

2 Cups COLD Heavy Cream

pinch salt



In the top bowl of a double boiler, whisk egg yokes very well and slowly add sugar while constantly whisking.  Add 1/2 cup warmed heavy cream and incorporate throughly before adding broken up chocolate bars or chocolate chips.  Allow chocolate to melt while stirring frequently.


Once chocolate is completely melted, remove from double boiler and let cool.


In large mixing bowl whip COLD heavy until thickened into peaks, adding pure vanilla extract  and additional 3 TBS sugar about halfway through.


Set a small amount of whipped cream aside for chocolate mousse topping.


Fold in a large dollop whipped cream into cooled chocolate mixture, mixing well.  Then reverse bowls and fold in chocolate mixture to the whipped cream until fulling incorporated.


Portion chocolate mousse into small bowls or ramekins.  


Chill for at least an hour or up to a couple of days.


Top with whipped cream & candied heart and enjoy with your Valentine!





For the Candy Hearts Garnish:


1 - 12 oz. package Pink Chocolate Candy Melts (Available at party or craft supply stores)


Place desired amount of pink candies in a Ziplock sandwich bag and seal.  Drop bag in a bowl of hot water just off a boil. 


Melt candies.


Snip one bottom corner of Ziplock bag with a SMALL diagonal slit to make a homemade piping bag and heart-shaped design on wax paper.  Let stand to harden or place in freezer if you are in a real hurry.


Garnish top of chocolate mousse with a dollop of whipped cream and pink candy heart.
