Indonesian Street Tacos
Babi Kecap -This is the meat for the tacos
Ingredients
• 100 g shallots, thinly sliced
• 50 g garlic, crushed
• 25 g peeled ginger, finely grated
• ½ tsp salt, plus extra to taste
• 1 lb pork belly, cut into 3cm chunks
• 4 tbsp kecap manis (thick sweet soy sauce)
• 2 tbsp dark soy sauce
• 3 tbsp tamarind water
• ½ tsp freshly ground black pepper
• ½ tsp Chinese five spice powder
• 8 red bird's eye chillies, slice in half lengthways and seeded
• 2 cups/500 ml chicken stock
Method
Braise the pork in a broth or stock and place all ingredients in pot or crock pot. This could take 6-8 hours
When braising a meat it just must remain in a liquid submerged completely until tender.
Sambal Sour Cream
1 tablespoon sambal
1 cup sour cream
Method
mix together until combined
Curry Sauce
3 tbs red curry paste
3 tbs yellow curry paste
4 tbs coconut milk
1 tsp cajun seasoning
1 tsp ground ginger
1 tsp cumin
Method
Heat over low heat until ingredients are combined.
Siracha Infused Olives
1 cup kalamata olives
2 tbs siracha
1 tbs red wine vinegar
Method
Mix together and marinade for 48 hours
Tomato Jam
1 cup tomatoes grape or diced
2 tablespoons brown sugar
3 tbs sweet chili
Method
Cook tomatoes, sweet chili, sugar over low heat until tomatoes begin to break down let cool slightly and use as garnish
