5 lbs. chicken, boneless skinless, diced
1 cup sweet onion, finely diced
1 small can sliced water chestnuts, drained
1/2 cup hoisin sauce
1/4 cup low sodium soy sauce
1/4 cup water
2 tablespoons canola oil
1 clove garlic
1 tablespoon ginger

Sauté the chicken in 2 tablespoons of canola oil. Once the chicken is fully cooked add the onions and water chestnuts. Stir and cook the onions until they begin to soften. Add the hoisin sauce, soy sauce, water, garlic and ginger.

Stir the ingredients together over low to medium heat. Serve the chicken in butterhead lettuce as a wrap. Also served with a side of rice and vegetables.

Freeze the excess chicken after it has fully cooled so that you can thaw and warm it on a busy week day evening.
