Loaded Bacon Stout Mac'n'Cheese

Melissa Doney of Brown's Brewing Company wins hearts, minds, and palates with her Loaded Bacon Stout Mac'n'Cheese in the Let's Eat Kitchen.
Loaded Bacon Stout Mac-n-Cheese

Serves 2 people
- 1 tablespoon bacon fat
- 2 teaspoons minced shallots
- ¼ cup BROWNS Oatmeal Stout
- ¾ cup Heavy Cream
- 1 cup cheddar jack cheese, shredded
- 1 cup smoked gouda, shredded
- 16 oz cooked cavatappi
- ¼ cup chopped bacon, for garnish
- 1 cup pulled pork (you can make your own or purchase already made)
- 1 cup crispy onion strings
Cook the pasta according to the package, drain and cool, reserve water in pan to reheat pasta.
In a saute pan over medium heat add the bacon fat, when melted and hot add the shallots. Let cook for 1 minute.
Add BROWNS Oatmeal Stout, Heavy Cream to the pan.
Bring to a Boil, reduce heat and slowly whisk in the ¾’s of the cheese, in small amounts
When the cheese is incorporated and thick (if to thick add more cream), dip the pasta in the hot water, drain and mix the pasta into the cheese sauce.
Place into serving bowl of your liking
Top with the remaining cheese, bacon crumbles, pulled pork and crispy onions
Enjoy with a BROWNS Black Cherry Stout
