Lunch Box Masterpieces

Jodie Fitz showcases her Mom-ly food wizardry, magicking up a trio of tempting Lunch Box Masterpieces, to keep hungry kids fed and entertained.

Three Ideas to Spruce up the Lunchbox:

1.  Fruit Heads by Jodie Fitz
1 FlatOut® Fold-it®
4 raisins
2 apple wedges
1 strawberry, sliced
2 tablespoons peanut butter
1 tablespoon honey
1/8 teaspoon cinnamon
Mix the peanut butter, honey & cinnamon together to use as a spread.
Cut the FlatOut® Fold-it® in half to create two separate rounds.
Spread the peanut butter mixture on to each round.
Lay a piece of strawberry towards the edge of one side of each round to create a tongue.
Add an apple wedge to each round with the skin facing outwards to create a smile.
Fold the round in half and crease so that it stays closed.
Add a dot of the peanut butter spread to the top of each round in two places to create a ‘food glue’ for edible eyes. Add raisins to the spread dots and serve.
Nut Allergies: Swap peanut butter for soy butter or sunflower butter. Or, try combining 2 tablespoons whipped cream cheese with 1 tablespoon of honey as a spread.

2. Flower Bagel Bites with Jodie Fitz
 1 mini bagel, whole grain
2 tablespoon mascarpone cheese
1/4 teaspoon vanilla extract
1 teaspoon honey
Fresh strawberries 
Fresh pineapple 

How to create the Bagel Bite Flower:

  1. Stir the mascarpone cheese, vanilla extract and honey together.
  2. Rinse and slice the strawberries.  You can use a plastic knife for little fingers…
  3. Open the bagel and spread the mascarpone cheese on the inside of both halves of the bagel.
  4. Lay the strawberries on one side to create strawberry flowers pedals.
  5. Close the bagel and put the pineapple piece into the center of the bagel.


3.  Sandwiches turned UFO’s by Jodie Fitz
Honey wheat bread
Roll the bread flat with a rolling pin. Using a large circle cookie cutter cut a circle into the bread. You will need two slices per UFO. Follow the combinations below for the filling. Start by spreading either the peanut butter or the cream cheese mixture on the bottom of one round slice leaving approximately a ¼ inch from the edge plain. Add the other slice to the top. Using a fork, go around the two edges pressing them together to seal the sandwich pocket.2 tablespoons cream cheese
1-tablespoon yogurt based ranch dressing
1 tablespoon finely shredded or chopped carrots
Cucumber, sliced thin
Mix the whipped cream cheese, ranch dressing and chopped carrots together to create the spread. Spread it onto the bread & top with 1 – 3 cucumbers depending on the thickness.
