Amy Rota-Poulin spices things up in the Let's Eat Kitchen, preparing her palate-pleasing Maple Piri Piri Prawns, along with a terrific Sugared Maple Cocktail.

Maple Piri Piri Prawns

Maple Piri Piri Sauce


4 shallots, sliced

2 cloves garlic, sliced

¼ birds eye pepper, seeds removed (optional)

½ cherry pepper, seeds removed

½ sweet bell pepper, sliced and seeds removed

2 inches fresh ginger

2 inches fresh turmeric

2 tablespoons pure maple syrup

2 tablespoons pure sesame oil

Juice of 2 lemons

½ cup extra virgin olive oil

Himalayan sea salt and freshly ground black pepper to taste


In a saute pan over medium heat add 2 tablespoons extra virgin olive oil, shallots, birds eye pepper, cherry pepper, bell pepper, Himalayan sea salt and pepper. Saute until the scallions are tender and the edges are caramelized. Add garlic, turmeric and pure maple syrup. Cook for 1-2 minutes, remove from heat and let cool.


Add shallot and pepper saute, fresh ginger, sesame oil, fresh lemon juice, and extra virgin olive oil. Blend until smooth. Season with Himalayan sea salt and pepper to taste.


Piri Piri Prawns

2 pounds of prawns, heads left on, and cleaned

¼ cup freshly squeezed lemon juice

2 tablespoons pure maple syrup

½ cherry pepper, seeds removed

Himalayan sea salt and freshly ground pepper to taste


Add prawns, fresh lemon juice, pure maple syrup, Himalayan sea salt and ground pepper. Marinate for 10 minutes or even overnight in your refridgerator.


In a saute pan on medium high heat, add extra virgin olive oil and shrimp. Cook on each side for 2-3 minutes or until the prawns turn pink and are thoroghly cooked.


Serve over jasmine rice, with a citurus maple salad and top with Maple Piri Piri sauce.


Maple Citrus Salad


2 cups of citrus fruits, peeled and sliced. Fresh mandarin orange, navel orange, lime, blood orange, grapefruit

½ red onion, thinly sliced

2 scallions, thinly sliced


Juice of one lemon

2 tablespoons pure maple syrup


Add all ingredients together in a bowl and gently toss until combined.


Sugared Maple Cocktail

1 tablespoon pure local maple syrup

2 parts Vermont Spirits Gold Maple Vodka

2 parts fresh pomegranate juice

Squeeze of fresh lime juice


Pure maple sugar

Malden sea salt



Rim a martini glass in pure maple syrup then into a mixture of pure maple sugar and Malden sea salt.


Add pure maple syrup, Maple vodka, fresh pomegranate juice and squeeze of lime. This maple season favorite will warm you up from the inside out any time of year!
