Maple Sriracha Glazed Pork

Amy Rota-Poulin makes maple magic in the Let's Eat Kitchen, assembling a feast of Maple Sriracha Glazed Pork Shoulder, Cranberry Maple Pie, and Maple Irish Coffee to wash it all down.

Amy’s Premium Pork Dry Rub

1 tablespoon Himalayan Sea salt

1 teaspoon freshly ground peppercorn

1 tablespoon ground cumin

1 teaspoon dried thyme

¼ teaspoon ground nutmeg

¼ teaspoon ground cinnamon

¼ teaspoon ground ginger

Pinch of crushed red pepper

Sprinkle of curry powder

Maple Sriracha Glaze

1 recipe of Amy’s Premium Pork Dry Rub

½ teaspoon sriracha

2 tablespoons extra virgin olive oil

¼ cup of premium dark pure maple syrup

Mix dry rub together first, and whisk in wet ingredients until combined.

7 pound pork shoulder, bone in

Directions: Preheat oven to 350 degrees. Add pork shoulder to a large roasting pan and pat dry. Rub in the Maple Sriracha Glaze on all sides and cook skin side up. Tent with aluminum foil.

Cook for 1 hour at 350 degrees, then reduce the heat to 225 degrees for 2 more hours. Using two forks, the meat will pull apart.

I like to serve this with Boston lettuce leaf wraps and serve with toppings including

Cranberry Maple Pie

For the filling

16 ounces of fresh cranberries, coarsely chopped

3/4 cup pure maple syrup

Sprinkle of Himalayan salt 

For the crust

1/2 cup coconut oil                                     1/3 cup brown rice flour

2/3 cup pure maple syrup                          1/3 cup tapioca flour

2 jumbo eggs                                                1/3 cup potato starch

2 teaspoons pure vanilla extract               1/4 cup flaxseed meal

1/2 teaspoon Himalayan sea salt

1 tablespoon baking powder

Preheat oven to 350 degrees. Pour the filling ingredients into a food processor and chop until coarse. Pour evenly into a coconut oil greased pie plate.

Add all of the crust ingredients to the food processor and pulse until thoroughly combined. Pour on top of the cranberry filling and spread evenly.

Bake at 350 degrees for 35-45 minutes until the crust is golden brown and thoroughly cooked. Let cool before serving. Enjoy!!

Maple Irish Coffee

Ingredients:

1 cup of premium dark roast coffee

1 tablespoon pure maple syrup

¼ teaspoon pure vanilla extract

¼ teaspoon pure almond extract

1 ounce premium rum

2 tablespoons of maple whip cream (to make the whip cream add 1 pint whip cream and 2 tablespoons pure maple syrup together in a blender and whip until firm)

In a heat safe glass stir together the dark roast coffee, pure maple syrup, pure vanilla extract, pure almond extract and premium rum.

Pour the whip cream into the coffee gently over the back of a spoon.

Sip and Enjoy!!
