Strawberries and Cream Stuffed French Toast

Mother’s Day is upon us, and here is a recipe sure to make Mom feel special on her holiday, and it’s made with ingredients that you may already be on hand in your kitchen.

French Toast 

8 Slices Perreca’s Italian Bread

6 eggs

1 cup heavy cream

1/4 maple syrup

1 pinch salt

1 tsp ground cinnamon

1 tsp pure vanilla extract

1 cup fresh (sliced) strawberries

enough butter to coat griddle 

confectioner’s sugar for dusting

Strawberry Cream Cheese Filling

8 oz. package of cream cheese or 12 oz. package whipped cream cheese

1 cup strained frozen & thawed sliced strawberries — set aside juice to make a syrup

Strawberry Syrup (Optional)

2 cups frozen & thawed sliced strawberries and their juice

1 cup granulated sugar

juice of 1/2 lemon


Prepare the French toast egg mixture by beating eggs well with a wire whisk or electric mixer.  Add cream, maple syrup, salt, cinnamon and vanilla and mix well. Set this mixture aside while making strawberry cream cheese filling.

In a separate bowl, combine room temperature cream cheese with thawed frozen strawberries.  Use a fork to loosen the cream cheese and take your time incorporating the two ingredients throughly.  Spread this mixture on one side of 4 slices of bread, then spread slices of fresh strawberries. Cover with the remaining 4 slices of bread making a sort of cream cheese and strawberry “sandwich.”  Soak each of these “sandwiches” in the French toast egg mixture, making certain to soak both sides thoroughly.  Place on a medium / medium low buttered griddle until cooked through on both sides. This should take about 7 to 10 minutes.

Sprinkle with confectioner’s sugar and serve with maple syrup or your own strawberry syrup. Garnish with additional fresh strawberries and enjoy!

For the syrup

Combine strawberries and their juice, sugar, and lemon juice in a saucepan and heat on medium stirring until mixture thickens.  Let cool to desired temperature and serve.
