Stuffed French Toast

What's the only way to improve French Toast? Chef Art Wise knows the answer: Stuff it! And as if that weren't enough, a little bonus bird makes its way into the picture, with some delicate Cornish Game Hens.

Serving Ideas: Use Maple syrup, fresh fruits, whipped cream and powdered sugar.

Description: A tasty twist on an old classic that brings it to a new level.

Ingredients:

 

2 large Eggs

½ cup Milk

¼ tsp. Cinnamon

½ tsp. Vanilla extract

4 oz. Mascarpone or Softened Cream Cheese

½ Texas Style Bread or Loaf Challah, sliced

½ cup fresh sliced Strawberries

1/4 cup Marmalade or Jelly (optional)

Powdered Sugar

 

Procedure:

Whisk together eggs, milk, cinnamon, and vanilla. Spread softened mascarpone or cream cheese on one side of the Bread. Place sliced strawberries on top of cheese (optional: spread marmalade or jelly over cream cheese). Put two slices of the bread together so that cheese and fruit are inside. Dip in egg mixture. Cook on griddle till brown on both sides. Sprinkle with sugar and a dollop of whipped cream and serve.

 

 

Stuffed cornish game hens

Cuisine: American

 

Ingredients:

1 1lb. Cornish Hen

2 tbs. diced chestnuts (roasted)

1 tbs. finely chopped onion

1 tbs. finely chopped celery

1/3 cup long grain and wild rice blend (cook according to box but use chix stock)

3 tbs. butter

1 tbs. honey

¼ cup soy sauce

Procedure:

Heat oven to 400.

Brush soy sauce inside and out of Game Hen.

Cook rice according to box but use chix stock. Let cool.

In a small pan saute onions celery and chestnuts in butter for 5-10 minutes and then add rice and blend together.

Stuff Hen with mixture. Place on roasting rack in pan and cover. Cook for 15 minutes then uncover and cook for 30 min or until internal temp of 180. Take out let rest 5 min. and serve.
